Located in the attic of the Town Hall, the acetaia (vinegar cellar) is maintained by a group of enthusiasts from the Ravarino Community of the Consorteria. It houses four batteries (two with five barrels and two with six), a mother barrel, and a small barrel of juniper. The facility is also equipped with a collection of tools related to the processing and production of balsamic vinegar. Additionally, the original manuscript, dated March 2, 1862, is carefully preserved at the Town Hall. In this document, lawyer and agronomist Francesco Aggazzotti describes in great detail the production process; this document is the oldest one we have that precisely outlines the procedure, making it effectively the “original recipe” for Traditional Balsamic Vinegar of Modena.
